Kako izmjeriti ljutinu chilli papričice? Koliko je jaka moja paprika? Scoville skala je mjerilo jakosti ljutine chilli papričica.
Capsaicin je kemijski spoj koji potiče kemijske receptore živčanih završetaka u koži. Broj Scoville jedinica označava količinu capsaicina prisutnih u određenoj papričici. Skala je razvijena 1912. godine od strane američkog kemičara Wilbur Scoville, kako bi ocijenili zajedljivost ili ljutinu paprike. Službeno, njegova metoda je poznata kao Scoville Organoleptički test.

U ovom je trik: s izvornim postupkom Scoville razmjera, u otopini se razrijedi ekstrakt paprike u šećerni sirup. Količina razrijeđenja (papar i šećerni sirup) daje mjeru Scoville skale.
